Dedicated Server Security

I recently expanded the hosting company from your average reseller up into two dedicated servers. I went with CentOS 4.1 for the operating system, and so far everything is going considerably smooth considering i have never done dedicated before. These are unmanaged so its all me, and i am looking for a good writeup on security setups and cant find one specifically for dedicated servers or centos.

I'm also not to familliar with SSH but i do have access to it and know how to login with it for modifying the files. Has anyone here managed a dedicated server before? Input/help would be greatly appreciated...
