super fast enchiladas

I've been doing these for a few years whenever I need something really quick to eat.

I use medium sized tortillas but others would work too :) take a tortilla and spread some ketchup and tobasco on it (like you would on a pizza) cover one half of it generously with shredded cheese. fold in half. place in toaster oven for about 3 minutes at 400F. Enjoy.

I've also done them with BBQ sauce.

variations include pepperoni or salami slices :)

hmmm, interesting.


when I first saw this threads title, I assumed "super fast" referred to the speed at which the enchiladas would travel through your digestive system. :-)

ketchup???  I would never put ketchup on a tortilla... salsa, never ketchup.  And I like to keep some ground meat fried up and in the fridge to throw into something like this as well :)

I think you're thinking of Ranch Dressing.  Thats good on nearly everything, ketchup has its limits.

That sounds waaaayyy too organised.
My quick and easy one as I dont think I have easy tortilla access is cheese and marmite paninis. Get a panini break smother it in marmite (mmmmm marmite) and then lay some really strong cheddar on the top. Then stick into a panini press for about 5 minutes.
