Title: Alton Brown's Grilled Steak without a grill

1 boneless rib eye steak, 1 1/2-inch thick
Canola oil to coat
Kosher salt and ground black pepper

Place 10 to 12-inch cast iron skillet in oven and heat oven to 500 degrees. Bring steak(s) to room temperature.

When oven reaches temperature, remove pan and place on range over high heat. Coat steak lightly with oil and season both sides with a generous pinch of salt. Grind on black pepper to taste.

Immediately place steak in the middle of hot, dry pan. Cook 30 seconds without moving. Turn with tongs and cook another 30 seconds, then put the pan straight into the oven for 2 minutes. Flip steak and cook for another 2 minutes. (This time is for medium rare steaks. If you prefer medium, add a minute to both of the oven turns.)

Remove steak from pan, cover loosely with foil, and rest for 2 minutes. Serve whole or slice thin and fan onto plate.
I've made this twice so far, and it turns out really simple.  Good taste, not overpowering.

Use a high smoke point oil or else you'll set off your smoke alarm in a hurry.

Done this as well.. works better than broiling it which is how I usually did it before.

It helps to actually have an iron skillet though.

It also helps to disable your smoke alarms before you do it.

It is.  Pay attention to the time though or else you'll burn the shit out of it.

Yeah, they're pretty cheap though.  I got a good sized one for like $10 at Meijer.

yea my iron skillet was like 10-15 as well. I forget where i bought it, been a few years

Not unless a recipe calls for it. See now i have to go food shopping and kill my "things from the freezer i can microwave" diet.

He means seasoning as in "caring for your pan", not spices and shit.

And yeah I do, just by what the instructions that came with it said.  Wash under hot water with a little soap and a stiff brush, and then i spray a thin layer of canola oil on it

I made this again last night with strip instead of the ribeye - turned out good as usual, but if you follow the directions and leave it in there for 3 minutes to get medium you'll get medium well.  Just a heads up

So, wait. You heat the skillet in the oven, but actually cook
on the stove? :dunno:

You heat the skillet in the oven, sear the meat on the range, and then finish it off to cook through in the oven.  You could probably start with the skillet on the range, but this lets you set the temperature more precisely.

Sorry, I'm going hiking this weekend :)
