My Squirrel Stew Recipe

Made some of this the other day, was a BIG hit all the way around.

4-6 Squirrels, Quartered.
1/4 Cup of Flour (optional)
1 Teaspoon of Salt, 1/2 of Pepper
4-6 Slices of Bacon
1 Chopped Vandalia Onion
1 Tablespoon of Brown Sugar, don't skimp
6 Potatoes
2 Cans of Baked Beans
2 Cups of Frozen Corn

Put the squirrels in a large crock pot. Cover half way with water and bring to a boil. Cover and simmer until the squirrels are tender.

While you are waiting, go ahead and chop up the bacon, peel and chunk the potatoes, and chop the onion.

Remove the squirrels from the stock and remove the meat from the bones. Let it cool down for this part, but don't let them go cold. Keeping them warm is best.

Return the meat to the stock and add the Salt, Pepper, Bacon, Onion, Brown Sugar, Potatoes, Beans, and Corn.

Cook for two hours stirring it every 15 minutes or so. Depending on the crock pot and alterations it may need a little more time.

To thicken the stew, mix the optional flour with some water and stir it in about a half hour before it is ready.

Serve with hot rolls and some beer!!
