« on: July 07, 2012, 12:57:28 PM »
we're having a Pool/BBQ get together tomorrow.

Here is what I'm making:
-BBQ ribs - 3 slabs
-chicken/veggie skewers
-veggie skewers
-shrimp skewers (I'll try not to over cook them this time :p )
-Hot wings
-baked brie with pear and apple slices
-strawberry cheesecake bites (check out picture below! they are awesome too bad I can only have one...)
-shit load of fruit
-shit load of beer

You're all invited - except for RoD ;)

BTW - the picture is not mine its from a friend on my FB feed who posted the recipe, I made a test batch for the kids yesterday and will make more tomorrow morning.

Got the skewers all ready to go

also added a couple of things to the menu:
-fresh mozzarella, basil, and tomato salad
-I had some of the strawberry cheese filling left so I added blueberries to it, and now it is a dip for graham crackers.

They aren't cooked, they are marinated.

Interesting.  I never lay my skewers directly on the grates.  I have a rack that the ends of the skewers sit on that holds them just above it.  Probably doesn't really make a difference though.

Actually, it does but it depends on the type of grill. Typically with most grills when you lay them directly on the grate you need to spray the grate to prevent sticking. They make flavorless cooking spray, but if you are using a propane grill the taste tends to be pretty different anytime you cook them in the grate with some type of anti sticking product. When cooked on propane from the risers like what you have the favor tends to be completely natural and usually, better. It also allows the excess marinade to run off easier during cooking then directly on the grates, and cooks them more evenly.

When using charcoal or wood like I do there is not a whole lot of difference because the anti stick products are not detectable because of the smoke.

But isn't the cook time between chicken and vegetables so different that the veggies cook too long

Nope. You cut the meat small for skewers so it cooks faster than normal. It tends to go the other way honestly, if they are on too long the veggies get too soft.
