What to do with this zinfandel?
« on: December 10, 2011, 08:44:35 PM »
So a few years back I as stupid and bought a big bottle of zinfandel.  It is good zinfandel but I don't care for zinfandel anymore.  I looked it and is already showing some evaporation so I need to get rid of it.  Hate to just dump it out so I'm looking for ideas of what to do with it.

I'm thinking of trying to make a reduction with it.

Another good choice. There is no better place for a wine past it's time than the kitchen

So I made it into a reduction.  Didn't turn out how I thought.  It was way beefer than I expected.  Not sure if that is because the recipe called for too much beef stock or because I used bullion to make the stock.  And it wasn't as thick as I thought it should be.  That said it is tasty so I'm gonna make a beef soup with it.

When I did the reduction I had 3 1/2 cups left so I took that, added a cup of veggie base, and 2 cups water and added celery, potato, carrot, onion, jalapeno and some stew meat.  Let it cook for an hour or so.  It was good.  The broth had a nice flavor without being too strong.  The jalapeno was initially really strong but by the time had dinner it was just right.

And now I have more soup to freeze.

Sounds like a really good idea. That's what I really like about wine, it always has a use.

I started making a stir fry today and realized I had no sauce... so I poured in some red wine. The chicken turned purple and the stir fry was pretty tasteless. Next time I'll try the reduction thing.

Yeah, I've done that before and it does really suck.
