I went to the grocery store yesterday. The aisle with all the soda was called "Soft Drinks". Maybe that's a term that covers more than just soda?

my take on that phrase is that it means any sort of "created" beverage, mixing more than one ingredient, but not containing alcohol or milk.

so  "Apple Juice" is a juice but "Fruit Punch" is a soft-drink.

Pepsi used to be called Pepsi-Cola, and Coke is Coca-Cola, and Sprite's real name is Sprito-Cola, so I'm going with Cola from now on.

I'm gonna agree with that.  Often when I'm at a restaurant and I'm not sure if they serve Coke or Pepsi products (or some off-brand) I'll usually just ask for a "Diet Cola" expecting them to bring me diet coke or diet pepsi.  If they showed up with Diet Sprite or Diet Root-beer, I'd politely send it back as those are not colas.

just like "orange soda" is soda water flavored with orange and "lemon lime soda" is flavored with lemons and lime, "cola" is a soda traditionally flavored with extracts from the Kola nut.
