You know, I never knew that was a real term / method. The person who taught me how to butcher deer had shown me how he makes what he called "butterfly steaks" from the backstrap. I love them and have always done it this way since, but thought the terminology was what he made up.

Seriously folks dump the traditional way and try what I posted.  Save time and get a far superior bird and stuffing.  90 minutes of bake time give or take.

I will probably try that if the following two things happen:

1) We have our own place by then. God I hope so. Finding places around here has proven to be tricky, mostly cause of the dogs.

2) My woman allows me too. She loves her deep fried, and you don't stand between a pregnant woman and her food.

Deep fried is just about as good.  Total fail on the stuffing though.  Traditional style is really a mistake by today's cooking standards.

Unless my mother in law cooks it. We would be heading to Grand Rapids for T-day but Ashley can't get off work for it. Damn state jobs.

Well, the turkey was an almost disaster. We put it in the fridge two days before the cooking day, but it was still completely frozen. So that morning, instead of thawing it when we got up, we went out for brunch and coffee. When we got home we put it in water for about two hours (that was the amount of time needed to thaw the turkey as predicted by a number of websites). The turkey seemed thawed so we just shoved it in the oven, we were already a little behind schedule so we didn't have time to butterfly it. After a couple of hours it was completely cooked on the outside and still frozen in the middle! Nice! We cut the turkey up into it's various turkey parts and put them back in the oven to cook the frozen bits. Surprisingly the turkey turned out ok, certainly not the best turkey I've ever had but quite tasty none-the-less. :thumbsup:
