Anyone care to share their recipe for mashed potato? I've never been able to get mine the same as you get in the States - not sure if it's the type of potato, or the recipe, but they never seem to come out quite as creamy.

Tips?

buy instant potato flakes, double the recommended amount of butter and dash in some garlic powder.  Ta-da!

if you want them more creamy, use an electric hand-mixer instead of mashing them by hand.  Also, add a bit more milk (or better yet, use sour cream)

Instant potatoes have turned out much better than any mashed potatoes I've ever made. Just get the better quality ones.

you can also sub cream cheese for the sour cream - makes it super tasty!

Get small potatoes (e.g., Yukon Gold). Boil them, then mash them with just enough milk necessary for the mashed potatoes to stick together. Add a chunk of butter and you're done.

The key part is to NOT PEAL the potatoes. mmmmmm...

Re: Instant mash, yeah, I used to, but it feels like cheating somehow, and although the texture is great, the taste isn't the same somehow.

Here is how we make them (and that is at least 3-4 times/week). Idaho potatoes FTW. Salt water per taste. Boil potatoes until for goes in easily. When I make them I just cut the potato in half to boil it, my wife cuts them into small pieces, and the whole process is much faster this way....anyway, this takes about 30min - 45min.

Drain. Lots of thick sour cream (and butter, but we rarely add any) a shot glass (or two) of milk - mash mash mash. Done.
Do not follow where the path may lead. Go instead where there is no path and leave a trail.
